Ingredients for 6 servings:

Spaghetti 500 g
Green pistachios 50 g
Garlic 4 cloves
Fresh chili pepper 1 piece
Shrimps 500 g
Dry white wine 100 ml
Parsley 20 g
Olive oli 100 ml
Celery 1 stalk
Carrot 1 piece
Onion 1 head
Carnation 1 piece
Tomato paste 20 g

Preparation:

  1. Boil the shrimp in lightly salted water until tender, peel off the shells and set aside. Put the shells in a small saucepan, add olive oil and fry together with finely chopped onions, carrots and celery for 5 minutes. Add garlic, coarsely chopped, tomato paste — and fry for another 1 minute. Add dry white wine, evaporate the wine almost completely, add 1 liter of water or chicken broth, cloves, a pinch of salt and cook for about 20 minutes, strain.
  2. Mix about a third of this liquid with 3 liters of water, add salt, bring to a boil and boil spaghetti in this liquid.
  3. In a large saucepan, heat the butter, fry the flour in it, add the remains of the shrimp broth, cook, stirring, until the sauce thickens.
  4. Mix in a saucepan together with spaghetti sauce, boiled shrimp, thinly sliced chili pepper and chopped pistachios and chopped herbs, warm up for 1 minute and serve.
